	Scharffen Berger Extra Bitter
	Scharffen Berger 82% Extra Dark Chocolate is a blend of four of the finest Trinitario cacao beans available. Trinitario cacao is a natural hybrid of the fruity Criollo bean native to Central America, and the earthy Forastero bean native to northern Brazil. It first appeared in Trinidad in the 1700's and now grows in tropical countries around the equator. Trinitario's flavor notes vary from producer to producer and country to country. With only a small amount of sugar in our 82%, the essential flavors of the cacao beans rise to prominence. Cherry, bitter almond, and hints of black pepper and cinnamon are some you may find. As a result of our choice of only well-fermented cacao, the inherent tannins are soft. This chocolate is delicious now and will improve with age.
