Pralus Madagascar 75% Cocoa | Extra Bitter
Origin: Madagascar Region: Plantation: Species: Vintage: The beans used for this chocolate are of the Criollo variety, hailing from 17 degrees 5 minutes South 47 degrees 20 minute East, which puts the plantation in north central Madagascar just west of the city of Taomasina. It has a cocoa-mass content of 75% with a touch of vanilla for seasoning and a touch of soy lecithin for smoothness. It has what has been described as a "fresh" nose, with loads of fruit, especially black cherry. It has a most delicate flavor that causes the palate to explore its complexity – bitterness preceding sweetness leading to a fine acidity and echoes of the opening bitterness on the finish.
