L'artisan du ChocolatL'artisan du Chocolat products are created by hand in Atelier
near London. The
guiding philosophy is to source the finest natural raw ingredients, use artisan
rather than mass production
techniques and thoroughly research taste and textures to create extraordinary
chocolates. The source for the chocolate are the most flavourful cocoa beans.
Cocoa
is an agricultural product and therefore its taste and flavour characteristics
will depend on the type of tree that it comes from, the climate and soil of the
plantation where it is grown and the dedication of the farmers who grow it.
Most
of the cocoa for the production
is grown on Criollo or Trinitario trees. These trees give full aroma cocoa beans
but are fragile, poorly productive and therefore not commonly used for large
scale productions.
Countries that are not intensively farming cocoa and invest in quality rather
than quantity are selected. Today 60% of the world’s cocoa is planted in
Ghana
and the Ivory
coast,
although most of it is a low flavor robust variety called forastero. Instead
L'artisan du Chocolat prefers to work smaller producers in
Venezuela,
Madagascar,
Domenican republic, Equador, Trinidad
or New
Guinea.
