It has become a variety in its own right over a long period of time due to its uniqueness. Less distinguished forasteros have traditionally been used as flavor beans in dark chocolate blends. Ecuador Nacional produces a chocolate that is lightly floral with strong herbal overtones. It is more astringent than other cacao beans and has no acidity.
